Ok, just because it took me a few minutes to figure this out and others might be curious, I added this line to my .swishcgi.conf as the variable "logo"

    logo => '<a href="http://swish-e.org"><img border="0" alt="Swish-e home page" src="/images/swish-e.gif"></a>',
